Benzaldehyde DD – Symrise
Benzaldehyde is the bitter almond-cherry aldehyde of perfumery – the molecule behind marzipan, cherry and almond notes. Benzaldehyde DD is the Symrise quality. The material oxidises easily in air to benzoic acid and must therefore be stored with care.
Odour profile
- "Fruity, Almond, Cherry, Apricot, Peach" (official Symrise descriptors)
- Odour family according to the manufacturer: fruity
- Bitter almond, marzipan and cherry character
- Physical form: clear, colourless liquid
Role in the formula
Benzaldehyde is a top to heart note material: it sets the bitter almond-cherry accent in gourmand compositions, cherry and stone-fruit notes (apricot, peach) and marzipan themes. Symrise states a use level of up to 2 % – even small amounts clearly steer a formula towards almond/cherry. As a small, volatile aldehyde (boiling point 179 °C) it acts early in the dry-down and needs fixing partners in the base.
Use in perfumery
- Fine fragrance: use level up to 2 % in the concentrate according to Symrise
- Fragrance fields: gourmand, cherry, almond, marzipan, apricot and peach notes
- IFRA note: the substance is subject to an IFRA Standard (restriction, 49th Amendment); maximum level in Category 4 (fine fragrance): 0.25 % – the maximum levels per product category in the current IFRA Standard are authoritative
Practical note: dissolving, storing, combining
Dissolving: Liquid and directly miscible in ethanol and common perfume oils; water solubility 6.95 g/l (25 °C). Because of the low use levels, a pre-dilution is recommended.
Storage: Benzaldehyde oxidises easily in air even at room temperature to benzoic acid (recognisable by crystalline deposits). Therefore store tightly closed, cool, ventilated and in the dark, keep containers as small as possible and minimise headspace. Keep away from aluminium, bases, iron, oxidising agents and phenol.
Combining: Cherry, almond, apricot and peach notes as well as gourmand accords.
Origin
Benzaldehyde is the odour carrier of bitter almond oil and, at over 95 %, readily biodegradable. The manufacturer is Symrise AG, Holzminden.

Safety information
According to the manufacturer's data (Symrise), benzaldehyde is classified with GHS07, GHS08 and GHS09 and the signal word "Warning": H302+H332 (harmful if swallowed or if inhaled), H315 (causes skin irritation), H319 (causes serious eye irritation), H335 (may cause respiratory irritation), H361d (suspected of damaging the unborn child) and H411 (toxic to aquatic life with long lasting effects). For transport: UN 1990, class 9, packing group III. The flash point is approx. 64 °C.
IFRA: Restriction Standard "Benzaldehyde" (49th Amendment, restriction due to dermal sensitisation and systemic toxicity); maximum level in Category 4 (fine fragrance): 0.25 %; the current IFRA Standard is authoritative.

FAQ
What is Benzaldehyde DD?
The Symrise quality of benzaldehyde (CAS 100-52-7) – the bitter almond-cherry aldehyde for perfumery.
How should benzaldehyde be dosed?
Symrise states up to 2 % in the concentrate. In addition, the maximum levels of the current IFRA Standard apply to the finished product (Category 4, fine fragrance: 0.25 %).
Why does my benzaldehyde eventually smell "different" or form crystals?
Benzaldehyde oxidises easily in air to benzoic acid. Store it tightly closed, cool and dark, and keep the headspace in the container small.
Is benzaldehyde hazardous?
According to the manufacturer's data, yes: H302+H332, H315, H319, H335, H361d and H411 (signal word "Warning", GHS07/GHS08/GHS09); transport as UN 1990, class 9, packing group III. Work with gloves, eye protection and good ventilation; keep away from aluminium, bases, iron, oxidising agents and phenol.
